Susceptibilidad antimicrobiana de enterobacterias aisladas de refrescos artesanales de expendio ambulatorio, Chiclayo 2024

Objective: To evaluate the antimicrobial susceptibility of enterobacteriaceae isolated from handmade refreshments at street outlets, Chiclayo 2024. Methods: Prospective descriptive and cross-sectional study of 80 handmade refreshments, which were processed according to the recommendations of the International Commission on Microbiological Specifications for Foods (ICMSF) and ISO 21518. The CLSI M100 2023 was used for susceptibility. Results: The most common handmade refreshments were barley, passion fruit and purple corn drink, where Klebsiella pneumoniae and Enterobacter cloacae predominated with 36.2 % and 28.8 %. The isolates of K. pneumoniae and E. aerogenes were pansensitive. While other bacteria showed intermediate susceptibility and resistance to at least one antibiotic. Conclusions: The handerafted drinks evaluated were contaminated with enterobacteria in 81.2%; also, the bacterial isolates showed high sensitivity to the antibiotics tested.
